Created by Mindy Kucan, this is the official cocktail of Tiki Kon: Eye of the Tiki, also known as "the Tiki Kon that never happened." The name is very fitting for such a tumultuous year.
- 1-1/2 oz Toki Japanese Whiskey
- 1/2 oz Unaged Agricole Rum
- 3/4 oz Orange Juice
- 3/4 oz Lemon Juice
- 1 oz Salted Pineapple Syrup (see instructions below)
- FLOAT: 3/4 oz Junmai Sake
- GARNISH: Rim glass with toasted sesame seeds and coarse sea salt
Build all ingredients except sake in a shaker tin with 2 cubes and shake (the pineapple will aerate and become fluffy in the shaker tin with only two cubes). Strain into a glass or mug of your choice rimmed with salt and toasted sesame seeds and add crushed ice. Float sake and garnish with a freshly expressed orange peel.
Junmai is a category of sake (pure rice), any brand will work.
Salted Pineapple Syrup
On a stove with low to medium heat add 2 cups of pineapple juice, 3/4 cup of sugar of your choice, and a pinch of salt to taste. Simmer until sugar is dissolved and remove from heat. Cool and store in the refrigerator for up to 4 weeks.
